Beef Lasanga

Ingredients

  • Ground beef
  • 1 jar Prego sauce
  • Cottage cheese (dry)
  • 2 eggs - Salt
  • 1/3 cup Parmesan cheese
  • Lasagna noodles (sheet)
  • Mozzarella cheese

Methods

  1. Warm ground beef and Prego sauce in a saucepan.
  2. Stir together cottage cheese, eggs, salt and Parmesan cheese.
  3. Assemble ingredients into a pan. Layer half of the meat at the bottom.
  4. Continue layering cottage cheese, meat sauce and mozzarella cheese.
  5. Bake at 350°F for 45 minutes.
  6. Let rest for 5 minutes before serving.

Lasagna

Ingredients

  • 1 medium onion, chopped
  • 1 clove garlic crushed
  • 1 lb ground beef
  • 1 can mushrooms, obtional
  • 1 teaspoon oregano
  • 3/4 cup water
  • 1/3 cup parmesan cheese
  • 6 ounces mozzarella cheese
  • 9-12 lasagna noodles, cooked & drained
  • 2 tablespoons canola oil
  • 1 can (284ml.) tomato soup, or sauce
  • 5½ ounces tomato paste
  • 2 teaspoon salt
  • 4 eggs
  • 4 cups cottage cheese, dry

Ingredients

  1. Sauté onion and garlic in 1 tbsp. oil, add ground beef cook until brown.
  2. Blend in mushrooms and their liquid, tomato sauce, tomato paste, 1 tsp. salt, oregano and water. Simmer 15 min.
  3. Mix eggs with cottage cheese, Parmesan cheese, remain oil and salt.
  4. Pour about half the meat sauce in the bottom of a 9x13 baking dish.
    and cover with a layer of lasagna noodles. 5.Spread on the cottage cheese mixture. Add the next layer of noodles.
  5. Top with remaining meat sauce. Arrange slices of mozzarella cheese on top.
  6. Bake in moderate oven 350* F for 30 min. or until cheese is melted.

When using oven ready lasagna noodles; I soak the noodles in hot water till they are limp. That way they are nice and soft after baking and don’t soak up so much sauce. Turns out perfect!

Spinich Lasanga

Ingredients

  • 26 oz spaghetti sauce
  • No boil lasagna noodles
  • 16 oz frozen chopped spinach, thawed and squeezed dry
  • Salt
  • Pepper
  • 32 oz ricotta
  • 2 cups mozzarella
  • 2 tbsp olive oil

Methods

  1. Preheat oven at 400°F
  2. Layer ingredients on noodles in a casserole dish.
  3. Bake for 40-50 minutes.

Macaroni and Cheese Deluxe

Ingredients

  • 2 cups macaroni (shape of your choosing)
  • Cheddar cheese
  • Cream of mushroom soup
  • 1 cup chopped onion
  • 3/4 cup mayonaise
  • 1/4 cup green pepper

Methods

  1. Preheat oven at 350°F.
  2. Boil macaroni.
  3. Add remaining ingredients and mix.
  4. Pour into 2½ quart greased casserole dish and bake uncovered for 30 to 40 minutes.

Macaroni and Cheese Casserole

Ingredients

  • 1lb macaroni
  • 1lb whole tomatoes (fresh or canned)
  • 1 small onion, grated
  • 1 clove garlic, minced
  • 1/4 green pepper, chopped
  • Salt
  • Pepper
  • 2 cups grated cheddar cheese
  • Butter

Methods

  1. Cook macaroni until tender and drain. Set aside.
  2. In a saucepan combine tomatoes, onion, garlic, green pepper and seasonings.
  3. Simmer until green pepper and onion are soft.
  4. Grease large baking dish with butter; alternate with layers of cheese and tomatoes.
  5. Season between layers with salt and pepper.
  6. Bake at 350°F for 1 hour until brown on top.

Serves 8.

Easy Fried Rice

Ingredients

  • 2 cups rice, cooked
  • 2 tablespoons oil (Canola)
  • 1 small onion, chopped
  • 1/2-1 cup frozen peas & carrots, thawed
  • 2-3 tablespoons soy sauce, as needed
  • 2 eggs, lightly beaten
  • 2 tablespoons green onions, chopped (optional)

Methods

  1. Preheat skillet or wok to medium heat. Pour oil in the bottom. Add white onion, peas and carrots and fry till tender.
  2. Slide the onion , peas and carrots to the side, and pour beaten eggs onto the other side. using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  3. Add rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

The great thing about this recipe is that you can add whatever you would like. Bacon, chicken, or ham. It is the perfect fried rice base.

You can use day-old rice which makes this recipe a great way to use up leftovers.
